Celebrity Master Chef Rehman specially flown in for this short time only, will prepare a traditional feast recreating the prehistoric magic of India’s royal dynasty. Just as the enthralling history of Awadh, the cuisine has a class of its own. Originating in the giant kitchens of the food loving Nawabs, Lucknowi food is subtly flavoured and the aromatic cooking involves finely ground spices and is cooked in the unique Dum style.
Gharana at Holiday Inn Dubai – Al Barsha is proud to be reviving centuries old recipes, taking you on a culinary journey back to the era of the Nawabs.
Whilst enjoying the traditional luxurious gourmet food from the land of Awadh, you will be entertained as usual by our live resident band, who will enthral you to tap toe and practice your jatkas not forgetting the rhythmic ‘wah-wahs’ Just a small note on this cuisine that Gharana revives famed for its delectable flavour’s. Awadhi cuisine has a specific style of cooking that brings out the real essence of the delicacies. The bawarchis (chefs) and rakabdars (gourmet cooks) of Awadh were the originators of the ‘dum’ style of cooking, the art of cooking over a slow fire enabling the Lucknowi flavour to be intact for choice of both Veg and Non-Veg platters.
This festival brings us a rich array of scrumptious Indian kebabs and curries of the royals..Non Veg starters ranging from Nasheela Jhinga, Mahi Dum Kebab, Galawati Kebab, Kakori Kebab, Murgh Tikka Mirza Hasnu or Haremasale Ke Murgh Tikka. And for the vegetarians Chef Rehman will lovingly be preparing Paneer Peeli Mirch Tikka, Chowk Ki Tikki, Subz Galawati or Aatishi Khumb Masala.
The main course titled as ‘NAZRANA HANDI SE (for non-vegetarians) and NEMAT-EZAMEEN (for vegetarians) followed by ‘JANNAT-E-BASMATI’ and finally ‘SHEERINI KA DAUR’, this culinary journey is certainly NOT WORTH A MISS !!!.
Despite the exponential growth of Dubai’s food scene in recent years to incorporate diverse and international flavours, the culinary arts are currently celebrating a renaissance of ancientspices and ingredients native to various regions, which brings us back to the basics. In a nod to our heritage, Awadhi Food Festival extravaganza’s mainstay game will for sure be the bigger and better at Gharana.
